BAKED CINNAMON APPLE SLICES
I’ve been making these apples since before Augie was eating solids (or even born). I love a simple recipe with a BIG payoff, and these are definitely that. Plus, they make the house smell soooo good while they’re baking. That might actually be the main reason I make them so often, if I’m being honest.
Once they’re done, you can eat them as-is (Augie’s favorite way) or you can use them in anything that soft, cinnamon-y apples would enhance. They’re delicious stirred into yogurt, oatmeal, muffin batter, and pancake batter, or topping things like French toast or pan babies. I also love them in savory dishes, too. I typically keep a container of them in the fridge most of the time.

Wait around time: 45 minutes
INGREDIENTS
1 pound apples (about two large apples), cut into 1/4-1/2 inch slices
1 tablespoon oil*
1 teaspoon ground cinnamon
*I love using coconut oil because the flavor pairs so nicely with the apples and cinnamon. However, because coconut oil solidifies in the fridge, you’ll need to heat the apples up before using. If you use something like avocado oil, the slices can be used straight from the fridge.
HOW TO
Preheat oven to 375 degrees F.
Pour oil into a medium-sized baking pan. I use an 8-inch x 8-inch cake pan, but any size or shape will due.
Add apple slices and sprinkle cinnamon over the top.
Bake for 15 minutes and then stir to coat each slice with oil and cinnamon.
Bake for an additional 30 minutes, stirring after 15 minutes.
