Three Ingredient Peanut Butter Cookies

THREE INGREDIENT PEANUT BUTTER COOKIES

I make a batch of these cookies at least once a week. They are a family favorite, mostly used for snacks. If you love peanut butter, these will not disappoint — the peanut butter is the star of the show here. I think the sweetness level is pretty perfect — enough to be sweet but not enough to overpower the rich peanut flavor. But, you can always boost the sugar a bit to get them closer to a more traditional peanut butter cookie in sweetness. I also sometimes add cinnamon and/or vanilla, but I bet ginger would be delicious, too. And no-one will be upset about a few chocolate chips slipping into the batter… except my 7 year old, which is why I never add them.


THREE INGREDIENT PEANUT BUTTER COOKIES

[makes 12 cookies]
prep time: 5 minutes
bake time: 10 minutes

INGREDIENTS

1 cup peanut butter (smooth or chunky)*
1 egg
1/4 cup sugar

*I use natural peanut butter (only ingredients are peanuts and salt). I haven’t tried this with a version of peanut butter that has additional oils included.

HOW TO

Preheat oven to 375 degrees F.

Stir all three ingredients together using a fork. You will likely need to sort of mash this, versus stirring, because it’s so thick. The goal is to incorporate all the egg and sugar evenly, so, when you don’t see any egg anymore, you’re likely ready to bake.

Bake at 375 degrees F until the edges begin to become golden brown, about 10 minutes. Let cool on the pan, before transferring to a plate.
