PINK LEMONADE SMOOTHIE
I had been dreaming of this smoothie for a while. There’s something about the crisp, zesty flavor of citrus that I love paired with a creamy, smooth texture. And for some reason in winter, I crave smoothies way more than I do in the summertime. (Though, I’ll probably never turn down a smoothie!)
This smoothie has a definite sour kick from lemon, but it’s tempered by the sweetness of the dates. I don’t like my smoothies to be overpoweringly sweet, so I’d say this one is “medium sweet” — based on a totally personal scale of flavor that no one else will understand and is deemed fairly useless. I stand by it — it’s medium sweet.

[Serves 1-2; Makes 3.5 cups]
Prep time: 5 minutes
INGREDIENTS
1 heaping cup frozen cauliflower florets or frozen diced zucchini
1 heaping cup frozen strawberries
1 tablespoon lemon juice
1 teaspoon lemon zest
12 ounces water
50g dates, soaked in warm water for 10 minutes and then drained
1/2 cup cubed firm tofu made with calcium (5 ounces), diced (note: You can substitute 1/3 cup plain greek yogurt)
1 tablespoon almond butter
HOW TO
Blend all ingredients together until smooth. This will take several minutes to get all the pieces of dates blended.
