TAHINI, COCONUT, AND DARK CHOCOLATE FREEZER FUDGE

This super simple freezer fudge recipe doesn’t involve any cooking! You just mix the ingredients together, freeze, and eat. The tahini flavor comes through loud and clear, pairing with the cocoa and coconut. If you aren’t a tahini fan (what?!?!? ) you can substitute any nut or seed butter. Peanut butter is especially delicious, too!

I love this fudge after dinner…preferably with Netflix and a cup of tea!

TAHINI, COCONUT, AND DARK CHOCOLATE FREEZER FUDGE

[Makes 16 pieces of fudge]
Prep time: 10 minutes
Laze around time: 12 hours/overnight

INGREDIENTS

1 cup tahini (sub in your fave nut/seed butter if you don't *love* tahini)

1/4 cup coconut oil, melted (You may need to use more if your tahini is on the dry side)

1/4 cup cacao powder or cocoa powder

1/4 cup maple syrup

1/2 cup toasted unsweetened shredded coconut

1/4  cup cacao nibs (leave this out if you want a smoother fudge...I like the crunch!)

a few pinches flaked sea salt


HOW TO

In a medium bowl, stir together the tahini and coconut oil until smooth.

Add cacao powder and stir until smooth.

Add maple syrup and stir until smooth.

Gently stir in toasted coconut and cacao nibs.

Line a small baking dish (about 6"x6") with parchment paper. Spread the mixture onto the parchment paper until it's about 1/2 inch thick. Depending on the size of your dish, the mixture might not reach the edges, and that's ok. Or, if you have a smaller dish, you can always make thicker pieces of fudge.

Sprinkle the top with sea salt flakes.

Cover and freeze until completely firm. We usually let it freeze overnight.

Slice and enjoy frozen. Store uneaten fudge in the freezer.
